When considering the stunning dry whites produced in the village of Chablis the phrase 'Often imitated, never duplicated' springs to mind. For many years both old world and new world producers alike have been trying to emulate the crisp, fresh, apple led wines produced in the Northern Burgundian appellation, considered by many to be the purest expression of the Chardonnay grape variety.

 Unfortunately for those who would try to mimic the Chablis style they are fighting a battle that it is almost impossible to win. This is because the terroir - a French word that describes the culmination of climate, soil and growing conditions - is unique to the region and is at the heart of its unique flavour and style.
