Colinas from the Douro

Whilst most commonly seen on these shores as components of the nation’s favourite fortified wine, it is far more common to see these varieties used to make traditional table wines in their homeland of Portugal. The thick rubbery skins of the grapes are perfect for extracting lots of tannin and character when aggressively foot trodden in the traditional lagars of the Douro prior to port production. However, when making wines such as the Colinas do Douro which is featured in this month's case a far gentler process is used.

 This is an extremely versatile food wine which pairs well with a wide variety of dishes, including moderately or strongly flavoured white and red meat, pasta, pizza, oily fish like salmon or mackerel, cured cheese and chocolate.
