The wine that we have opted for is a blend of Semillon and Sauvignon Blanc from the Margaret River region of Australia. Whilst rarely seen in the New World, this combination of grape varieties is common in Bordeaux where they are usually aged for a period of months in oak barrels. A percentage of the Semilon in this blend is oak aged and it is this which allows it to stand up to the rich flavours of salmon. This wine which is made by Mark Messenger of the Junpier Estate is a nod in the direction of these world renowned food centric wines, whilst still retaining a typically Australian ripe fruit character.  

The small town of Margaret River in Western Australia is one of the most intriguing wine producing regions in the country. It boasts a unique microclimate with 80% of annual rainfall taking place during the winter. Summers on the other hand are largely dry with low humidity, meaning that growers rarely have to worry about the spread of fungal disease throughout the vineyard. The proximity of the vineyards to the sea also has an important temperature regulating influence which cools the area and causes the grapes to have a long, slow ripening period in comparison to much of the wider region.
