They specialise in the Burgundian varieties of Chardonnay and Pinot Noir and are establishing themselves as one of the top producers in the region.

The Crocodile's Lair vineyard is located 700m above sea level, ripens a month later than others, and benefits enormously from cool autumn temperatures. The Chardonnay that we have selected this month is partially oak aged. In this case only half of the wine that goes to make-up the finished product is aged for 8 months in French oak with the other half being aged in stainless steel. This restrained approach of new French oak coupled with the bright fruit of the unwooded portion presents voluptuous bright flavours of butterscotch, melon and creamy peach. This is a classic-styled Chardonnay of notable elegance and great complexity. An amazing wine to pair with rich salmon or poultry dishes.
