Very rich in style with good body, rich and toasty champagnes are typically the finest, with complex toast and biscuit flavours on the palate resulting from the additional yeast added during the second fermentation.

These fines wines tend to be more mature, since over time yeast resident in the wine mixture will react with the liquid to further bring out the toasty taste (yeast autolysis).
