Halibut
Halibut always makes for a great dish, particularly when it has been grilled. The text book refers to crisp, dry white wines to go with this fish such as Chablis or Muscadet.
You could look for tradional whites from the Loire, particularly Pouilly-Fume, or some of the cooler climate Sauvignons from the New World.
Depending on how the halibut has been cooked you could consider a sparkling alternative such as Champagne or an English bottle of bubbles.
