Soave DOC is located in Italy's north eastern region between Verona to the west and Vicenza to the north east. The foothills of the Dolomites are the dominating geographic feature here. Unfortunately, volume has taken precidence over quality for some time here which has damaged the Soave image. This is demonstrated in its output, 60 million bottles/year. This is going to take time to change, which is happening.

The DOC specialises in white wines made from the following varieties: Garganega, Chardonnay & Trebbiano di Soave/Verdiccio. The syles produced include still wine, spumante and recioto. At it's best, Soave should be delicate citrus and almond flavours with good depth/body. These are often from the communes of Soave and Monteforte d'Alpone, Soave DOCG, and labelled 'Classico'. Recioto di Soave is a sweet style made from dried Garganega grapes and displays honey and apricot flavours.
Soave's climate is Maritime, warm and dry in the summer and mild and damp in the winter.
