Only white wines are produced in Quincy, and, as with much of the Central Vineyards district of the Loire Valley, only the Sauvignon Blanc grape is used. It is a close neighbour of Sancerre, but the soils here are lacking in limestone (they are predominantly sand and gravel) and so the wine has a markedly different character.
The wines of Quincy are noted for their elegance. They do not have the instant fruit-laden impact of a Sancerre, or a New Zealand Sauvignon Blanc, but they make up for this with their fine structure and subtlety.
