The vineyard is continually monitored for ripening and condition. Amendments to foliage and discarding of green fruit during verasion helps achieve consistent ripeness for vintage. Hand harvesting helps select ripe bunches and berry sorting on tables at the cellar helps ensure their best fruit is used in the wine making. Fermentation is long, somewhere between 15 to 28 days depending on the fruit batch, which helps absorb more colour and tannin. Maturation for 18 to 24 months in oak barrels and vats works to round and refine the tannin. The oak is usually two to three years old and this ensures some flavour and impact from the wood but not an excessive amount that may accompany new wood.
