This multi award winning house cut no corners in either the vineyard or the winery. Grapes are harvested very quickly in order to preserve the fresh fruit flavours which are vital to this style of wine. Once transported to the winery only the best grapes are selected and pressed.
Temperature controlled alcoholic fermentation then takes place for between 15 and 40 days depending on the conditions of the vintage. Often different tanks are fermented for different amounts of time in order to achieve the correct levels of complexity and finesse that the wine demands. Malolactic fermentation then allows the wine to soften and develop a richer complexion. After all of this takes place the wine is then aged for a further 8 months on its lees aquiring more body and developing more complex flavours and aromas.
