Blue Cheese

Blue cheeses can be quite fussy with the wine that is to be served with them. Generally look to go with a sweet white wine.

The classic pairings with cheese such as Roquefort then look for a sweet Bordeaux and of course with Stilton go with a tawny or vintage port. 

If you want to be different then look to serve a Tokaji or a single vintage maderia.
