A sweet nose of orange, subtle cinnamon and forget-me-not develops to a creamy sweetness of butter, pepper and vanilla. The clings to the back of the mouth to leave a warming sweetness.

This seven year old whiskey is important to Glendalough because this is the length of time St Kevin of Glendalough spend living as a hermit, close to the lough. It's St Kevin's closeness and rapport with nature which the distillery's founders share, as far as the cave dwelling goes which they don't participate in..as far as we know!
Made from Irish barley and corn/maize this single grain is distilled in a Coffey still. Maturation occurs in first fill Bourbon and Spanish Sherry casks, three and a half years in Bourbon and six months in Sherry. The casking combination brings different flavours to the fore to produce an interesting single grain whiskey.
The Glendalough Distillery idea was conceived and by five friends, all sharing a deep interest in craft distilling. Grey matter, paper and pencils and many other items came together to put ideas into action! The resurrection of licensed, Irish craft distilling is the result. Respect for tradition married with innovation is at the core of Glendalough's work.
