Cabernet Sauvignon

Planted almost universally having begun on the Left Bank of Bordeaux, this famous tough-skinned small red grape gives tannin and body to the array of Bordeaux wines.

It is also successful in the New World, products from California and Australia having more potent flavours than those from native Bordeaux. Yet it is Bordeaux where the wine reaches its height; elegant, full-bodied and bold.

This variety is classically blended with Merlot or Cabernet Franc to elicit a deep and elegant wine, whilst in California it is often blended with Merlot.

Colour and Flavours

Since there is a great range of areas growing Cabernet Sauvignon, there is a great range of growing styles. From ripe and full-bodied berry styles to more herbal and tomato-bush greener styles, this variance in style in itself results in a variance of flavours, varying from blackcurrant to herbal and peppery tastes accordingly. Because of the high tannin in Cabernet Sauvignon grapes, the wines usually age very well, the texture becoming softer over time.

The finish is long and complex with penetrating depth of flavour.
