Ideal for Aging

These are perfect for cellaring (though this does not help our turn over...) At the moment they will be high in tannins or acidity and need time in which to soften.  The wines will tend to devlope complex and rich character through time resting in the bottle.

  5. Gevrey Chambertin, Cuvée Ostrea Domaine Trapet,

Gevrey Chambertin, Cuvée Ostrea Domaine Trapet, 2011 75cl

Pure with very fine tannin. Good intensity of the cassis-scented middle, a slight bitterness which will resolve, and good weight on the palate. Not yet explosive, it has easily enough going on; taut red fruit filling out to a blackberry finish.

  7. Château Talbot, Saint Julien, 2005

Château Talbot, Saint Julien, 2005 75cl

Like most 2005 clarets this is showing great character now but will also age well, we’re still not sure when this vintage will peak. Generous cherry and blackcurrant aromas are supported by firm but not imposing tannin and a long finish.

  8. Château Pichon-Longueville Baron, Paulliac

    Château Pichon-Longueville Baron, Paulliac, 2007 75cl

Blackcurrant aromas are supported by subtle soft spice. The palate brings some blackberry notes with a hint of cedar and tobacco. Whilst not as intense as the 2005, this still retains the elegance of good Paulliac and makes a fantastic alternative if something a touch lighter is required.

  9. Château Talbot, Saint Julien, 2008

Château Talbot, Saint Julien, 2008 75cl

Fruit not quite as dominant as the 2005, with more herbaceous notes detectable amongst tannin and spice. Medium body and quite soft on the palate too which makes for a creamy texture with an unimposing finish.

Fresh fruit is starting to show through here and it is joined by a decent amount Tannin that in time will soften to combine nicely. It’s all black fruit and, with a hint of leather to bring a bit extra, has great elegance and grace

  12. Château Kirwan, Margaux

    Château Kirwan, Margaux, 2009 75cl

Still too young to tell exactly how this wine will develop but expect blackcurrant fruit to be surrounded by strong tannin and cedar. Softening with time will bring smooth velvety palate and a long deep finish.
