Like most wines, there can be quite a range of different styles of Soave, in fact it is one of the most variable from the Veneto region. I like the Clivus for totally different reasons to the Ca’visco. It is a much more refreshing style of wine and it has a remarkably cleansing effect on the palate. It is a classic Italian house wine, dry and light with a steely finish.
