The Kaaimansgat (or Crocodile’s Lair) vineyard is situated in the Elands Kloof Valley near the village of Villiersdorp in Overberg. Here, the vines benefit from the cooler climate, critical to producing elegant Chardonnays. The decision not to over water the vineyards means that the grapes themselves are smaller, creating a more concentrated flavour for fermentation. Oak maturation brings an added element with some subtle toasty hints supporting the full flavoured complexity of the wine.
