Palomino

Since the must (crushed juice and skin) of this grape oxidises rapidly, and renders the resultant product low in both sugar and acidity, it is commonly used for sherry, most notably in the Spanish region Jerez.

The vine responds best to warm weather and so has adapted well in Andalucía, as well as after having been imported to South Africa (where both sherry and table wine are produced), New Zealand and California.

The grapes form in large, loose bunches, and yields are generally to be high and regular.

Palomino Fino was grown as a clone from Palomino to produce a high-yielding dry sherry.
