Pouilly-Fumé is solely devoted to Sauvignon Blanc and why would it not be when it does it so well. Limestone soils and a continental climate combine to bring the best out of the grape. The name is justifiably famous and, with less than half the production of Sancerre (six million bottles a year), its quality has remained more consistent. At its best it is quite superb.

Fumé means smoky, and the flint in the limestone soils on this side of the river (Sancerre is on the other bank) is sometimes said to give that quality to the wines of Pouilly-Fumé. They have a certain minerality and, though they should still be drunk when young, they can age a little better than Sancerre.
