Named after two rivers that flow into the Loire at Nantes, Muscadet Sèvre et Maine produces 80% of all Muscadet wines and they are considered the best that the Pay Nantais has to offer. Their secret is a method of production called 'sur lie'. This involves leaving the sediment in the wine as it develops and only removing it at the bottling stage. The result of this is a more concentrated flavour and, intriguingly, a hint of sparkle.
