The wine is also interesting in that it is completely unfiltered and doesn't go through any clarification process whatsoever. This allows the wine to retain all of its natural flavour and body. It is testament to the skill of the winemaker that they have been able to produce such a remarkably complex and multi layered wine whilst maintaining such a stable product. At an annual production of only 30,000 bottles any kind of contaminant in the wine could have a dire effect on the overall sustainability of the winery. This just goes to show their unwavering confidence in both their product and the wine making practices which have been handed down over centuries.
