Sauternes

It is the ultimate accolade for any sweet wine produced in the world to be compared to a Sauternes. At the confluence of the Garonne and the Ciron, the winemakers of this area eagerly await the mist that is thrown up by the cool waters of the latter hitting the warmer flow of the former. It is the mist that causes Botrytis cinerea, noble rot, and it is the rot that leads to the sweet, shrivelled grapes essential for great Sauternes. Who discovered that rotten grapes made magical wine is unknown, but they should be thanked by everyone with deep enough pockets to enjoy drinking these sumptuous offerings.

The Wine of Sauternes should be sweet, acidic and unbelievably rich. Sémillon is the grape responsible, though it is often blended with Sauvignon Blanc. Barsac is a famous commune within the larger appellation that is entitled to use either its own name or that of Sauternes on the bottle and is considered to be slightly lighter in style.
