Rosé wines are construced from red grapes, allowing the juice in contact with the skins only for a limited period to inhibit the full development of a red colour. The length of such will determine the hue, with deep garnet reds (produced by Australian Grenache) signalling a fuller-bodied and richer character than the delicate pink Zinfandel of California. Dessert wines are typically too domineering to accompany food dishes, and are best appreciated as aperitifs or post-dinner delights. Ranging from lighter and subtly forceful aperitifs to ostensibly potent and sticky after-dinner wines, the Muscat grape is the monarch here. The Eiswein (ice wine) of Germany, Austria and Canada produces the most lively, zesty and punchy flavours, whilst the Tokaji region produces very tangy and long-lasting sweetness. Read more

Fortified wine is strengthened through the addition of extra grape spirit, at the halfway stage of fermentation of wine. Port (Portugal) and madeira (Madeira) were birthed in the Iberian sphere of influence by accident, preservatives like brandy for long-distance maritime transportation being replaced by the addition of grape spirits.
